Dehydrated Sourdough Starter

Shipping included, so please enter correct shipping address!  About a tablespoon of our Luna Bread dehydrated sourdough starter. We use a 50/50 blend of King Arthur's whole wheat & all purpose Sir Galahad flours to feed our starters. It will look like powder or flakes. Will come in a plastic zip bag, and in a regular paper envelope.  Ready for rehydration. It will take several days up to a week of feeding to get to a state that it's ready to make into a levain for bread dough. Should be bubbly after 24 hours, but a few days will be needed to regain full flavor profile. 

Instructions: mix contents of bag with equal parts flour and water by weight. (About a third cup of water and equal flour by weight.)

On that first mix it might take longer to see a few bubbles. During the dehydration process most of the bacteria die of, only the strongest will survive, so it's a slow start. After 2 days, feed/refresh as normal by taking a small amount of that into a new mix of flour and water in equal parts to a fresh jar. You should begin to see activity after several feedings. Even though it's active doesn't mean it's Ready to bake bread. You must feed it for at least a week if not more to get it strong enough to raise bread. Works best if you feed it in a ratio that has less starter to Flour and water than your recipe will call for stater. In other words if your recipe is 20% Starter...if you feed your starter at less than 20% each time, it will be trained to do the job!
